Determination of MCPD and glycidyl esters in foodstuff

Contaminants are often found in food items due to the refinement process of oils and fats. CTC Analytics discusses the determination of 2- and 3-MCPD (3-Monochloropropane-1,2-diol and 2-Monochloropropane-1,3-diol) and glycidyl esters in foodstuffs using GC-MS. The study employs highly efficient automation with the PAL DHR Dual Head instrument under the CHRONOS control software. The analysis follows the AOCS Cd 29c-13 method and involves transesterification to convert analytes bound to fatty acid esters into their free forms for analysis. The method demonstrates high precision and reproducibility, making it suitable for routine analysis in food control labs.
